农历新年就在转角, 黄梨挞不可少, 今年试着自己做, 我想把她做成一个个元宝的形状, 应节嘛。这一波是第二次做, 要送邻居的, 开始做个“井”的装饰,然后觉得很闷,然后做了个“王”的装饰, 然而“王”只能送给“王八”, 不能送邻居, 最后做了“$”的装饰, 这下够“Wang来”了吧!!
材料:
Ingredients:
(24 pcs )
黄梨酱材料 Pineapple Jam Ingredients:
1) 水晶黄梨 Small Crystal Pineapple 2 pcs
2) 黄糖 Brown Sugar 160g
3) 肉桂粉 Cinnamon Powder 1 pinch
挞皮材料 Tart Shell Ingredients:
1) 低筋面粉 Cake Flour 200g
2) 蛋黄粉 Custard Powder 10g
3) 盐 Salt 1/2tsp
4) 牛油 Butter 100g (冷cold)
5) 鸡蛋 Egg 1pc (冷cold)
6) 水Water 1/2tbsp (冷cold)
1) 水晶黄梨 Small Crystal Pineapple 2 pcs
2) 黄糖 Brown Sugar 160g
3) 肉桂粉 Cinnamon Powder 1 pinch
挞皮材料 Tart Shell Ingredients:
1) 低筋面粉 Cake Flour 200g
2) 蛋黄粉 Custard Powder 10g
3) 盐 Salt 1/2tsp
4) 牛油 Butter 100g (冷cold)
5) 鸡蛋 Egg 1pc (冷cold)
6) 水Water 1/2tbsp (冷cold)
黄梨酱做法 Prepare the Pineapple Jam:-
1) Remove the skin and eyes of pineapple, cut into small pieces, put in food processor, blend until there is no large chunk. 黄梨去皮,去钉,切小块,用搅拌器打至没有大颗粒。
Cut the pineapples into small pieces.
Blend until there is no large chunk.
2) Pour the puree and sugar into the cooking pan, cook with high heat until bubbles appears, turn to medium heat, stir frequently. 把糖和黄梨倒入锅, 大火翻炒至沸腾, 转中火, 继续翻炒。
Pour puree and pineapple puree into a cooking pan, cook with high heat.
Turn the heat to medium when the puree is boiled.
3) Turn the heat to small when the puree is getting thicker, sprinkle the cinnamon powder and stir till puree turn golden brown and very thick. Set aside to cool down. 翻炒至水收干, 转小火, 加入肉桂粉, 继续翻炒至金黄色和非常浓稠即可, 放凉备用。
Turn heat to small when water in puree is subsided, sprinkle cinnamon powder.
Continue to stir till the puree is golden brown and very thick, set aside to cool down.
4) Roll the pineapple jam into 13g per balls. 把黄梨酱揉成13g的圆球,备用。
黄梨挞皮做法 Prepare the Pineapple Tart Shell:-
1) Mix dry ingredients in a bowl, cut butter into small pieces and add to dry ingredients, use fingers to rub the butter into the flour as per video below, until the mixture looks like bread crumbs. 把干材料拌匀, 牛油切成小块, 加入干材料, 用手指把牛油捏进干材料(去片。。。),直到呈现 “面包糠”状。
Rub the butter into the flour till the mixture looks like bread crumbs.
2) Add water to the egg and stir till mix, pour egg mixture into the flour, use a spatula fold the flour till it forms a dough as per video below. Wrap with plastic film and chill for 30mins. 鸡蛋和水拌匀, 倒入(1), 用刮刀伴至成团(去片。。。)。用保鲜膜包好, 冷藏30分钟。
3) Roll out the dough, cut dough with a cookie cutter, then place it into the tart mold, put pineapple jam on top of the dough, and do some decoration to the pineapple tarts. 将面团擀平, 用饼干模印出小面团, 放进挞模, 把一个黄梨圆球放在上面, 然后在上面做装饰。
4) Oven preheated to 180°C , brush egg wash onto the tart, send to the oven and bake for 20mins. 刷上鸡蛋液, 送入以预热至180°C的烤箱, 烤20分钟。
出炉啦!!and....it is DONE!!
